It has been a fun couple of weeks in our house. First, allergy season attacked, followed by some nasty colds this weekend that put both Jon and I out of commission on Sunday and Monday.
Sunday night, we were lazy and called for a pizza for dinner. And it was good! 🙂 Still, we have been trying to watch what we eat, getting more veggies, fruit, and fish into our diet. Somehow, pizza didn’t seem to fit that goal.
So, last night, I decided I headed to the kitchen to make a quick, healthy dinner. Seriously, I was in and out of the kitchen in 20 minutes, including prep time. Can’t complain about that!
I started with some jasmine rice. I added lime zest, cilantro, and kosher salt to the water and cooked it as usual.
Once that was on, I turned my oven to broil. I brushed two filets of Mahi-Mahi with olive oil, salt, and pepper. I put them on a baking tray, and popped them under the broiler for 15 minutes, turning after five minutes.
For a vegetable, I threw together an Asian slaw salad with some pre-chopped coleslaw mix I had in the fridge. I just poured a ginger dressing over it and added some slivered almonds and cilantro. To this point, it took 10 minutes. So, I flipped the fish, and headed to the sofa for a break. 🙂
Ten minutes later, my rice and fish were done. All that was left was to plate it up. I filled the plate with slaw and rice, then topped the rice with the fish. I squeezed a lime over everything, then spooned a bit of pre-made peach salsa over the fish. Easy-peasy, healthy dinner, even on a night where I didn’t want to move off the sofa.
Even better? It was delicious! 🙂 My only regret? I didn’t make enough for leftovers! 😉
